The Admiral Hotel in Mobile, AL, Opens After Renovation

The Admiral Hotel has officially unveiled a top-to-bottom renovation in Mobile, AL. The renovated hotel, a blend of 17th-century and modern-day luxury, draws inspiration from Mobile’s history and the vision of its founder, Pierre Le Moyne d’Iberville.

In the late 17th century, under the commission of King Louis XIV, the French explorer Pierre Le Moyne d’Iberville founded Mobile, AL. The Admiral Hotel, envisioned by Avocet Hospitality, stands as a modern-day tribute to this royal figure. Designed by Lisa Weitz, co-founder of Avocet Hospitality, The Admiral’s refreshed look includes bright jewel tones of purples and gold, paying homage to the city’s French-colonial and Mardi Gras heritage. The upside-down oak tree chandelier is reminiscent of the majestic oaks lining Governor Street. Meanwhile, the walls are adorned with mirrors and portraits, reminiscent of the Palace of Versailles.

Le Moyne’s Chophouse will open its doors at the hotel on August 19. It will be helmed by Chef Jeremiah Dennis, a master butcher and charcutier who specializes in using locally sourced ingredients. The menu will include dishes such as Oysters Louis, charbroiled in Wagyu beef fat with pernod pearls, aromatic herbs, breadcrumbs and caviar, reminiscent of the feasts of the French court. Additionally, a seafood tower will be among the offerings.

The menu's prime-aged cuts of meat and fresh Gulf seafood are complemented by a wine and cocktail program incorporating fresh herbs and honey from the hotel’s rooftop bee colony and garden.
