Jaw-dropping scenery, legendary cocktails and plenty of sunshine await in Latin America.
UXUA Casa Hotel & Spa, Bahia, Brazil
Best for… stylish jet-setters
The low-down: This secluded coastal resort (pronounced oo-shu-a), surrounded by a garden of lush jungle-like greenery, hummingbirds and monkeys, is a haven for the Brazilian elite. It’s found on the Unesco-protected town square of Trancoso and blends a modern design with locally crafted furnishings and artworks.
Out and about: Book a session with local cowboy Xibu, who will take you on a horse-ride along the beach, finishing at Uxua’s own beach bar.
Stella loves: The lake shaped pool is just exquisite, bejewelled with thousands of green quartz stones surrounded by fragrant flowers and coconut palms.

Tierra Patagonia, Patagonia, Chile
Best for... a luxury hideaway
The low-down: This hotel was built to blend into the incredible scenery: floor-to-ceiling windows offer far-reaching views of Lake Sarmiento and the Andes, while ostrich-like rhea and llama graze up close. Here you can drink pisco sours, have a massage and go for a swim in the shadow of the Torres del Paine National Park.
Out and about: Tierra Patagonia is all about the excursions. There’s horse riding, biking, birdwatching, boat trips to the grey glacier (which appears a brilliant blue in the sunlight) and a 12-mile hike to the base of the famous granite Torres. Not to mention trying to spot an elusive puma. Simply driving through the national park is enough to convince you that Chilean Patagonia is one of the natural wonders of the world.
Stella loves: The luxurious touches in the hotel, that make it cool yet cosy – think lambswool blankets and snug lounging spots.
From £3,695 per person for a six-night escorted tour to Chile (Santiago and Patagonia), including return international flights from London, transfers, excursions, three nights’ B&B at the Luciano K hotel in Santiago and three nights’ fully inclusive at the Tierra Atacama in Patagonia; coxandkings.co.uk

Belmond Hotel das Cataratas, Foz do Iguassu, Brazil
Best for… nature lovers
The low-down: This pretty pastel-pink property is one of just a few hotels in the Iguazu National Park, and just a 30-second walk from the stunning waterfalls. Hotel guests have privileged access to the park outside opening hours (before 9am and after 5pm). Back at the hotel, float in the infinity pool, head to the spa or stroll through the gardens filled with orchids and bromeliads.
Out and about: Engage a local wildlife expert or head-off on a self-guided walk on the trails of the national park. Ornithologists should take along their binoculars, as there is plenty of birdlife to look out for, including toucans and hummingbirds.
Stella loves: The hotel’s Ipe Grill, from where you can eat authentic Brazilian cuisine (tender barbecue or delicate fusion dishes), while parrots squawk in the canopy above and the waterfalls thunder nearby.
From £255 per night, b&b, including use of the tennis court and entrance to Iguazu Falls; belmond.com/hoteldascataratas

Paradisus Los Cabos, San José del Cabo, Mexico
Best for… family fun
The low-down: Located on one of the few swimmable beaches in Cabo, overlooking the famous El Arco rock and surrounded by beautiful gardens this is an all-inclusive haven, with four swimming pools and seven bars and restaurants. It has a great kids’ club and thoughtful bedtime milk and cookie service. If you want to go the extra mile, book a Family Concierge for tailored experiences.
Out and about: This is a dream destination for golfers – the hotel is located near a private course, Cabo Real. Meanwhile golf widows (and widowers) can flop on the picture-perfect beach nearby.
Stella loves: The two-storey beach club on the hotel’s roof terrace overlooking the Sea of Cortez. Views don’t get much better.
