St. Lucia's Anse Chastanet resort is launching new vegan dining offerings.
Four menus are offered most nights—from modern Caribbean to seafood and East Indian-St. Lucian fusion—which all include vegetarian and vegan choices, but Emeralds restaurant will now cater exclusively to vegans with a tapas-style menu.
Menu items include crispy cauliflower accras with lime, scallion, and St. Lucian mango chutney, as well as bread fruit gnocchi with tomato, lemon thyme and chadon beni pesto. The new menu was created by James Beard award winner and consulting chef Allen Susser in collaboration with the vegan chef de cuisine at the resort, Frank Faucher. Emeralds also plans to regularly host international vegan chefs.
Seasonal and local tropical fruits, spices, herbs, greens and vegetables are gathered from the resort's organic farm in the Soufrière hills, approximately 20 minutes away from the resort. Guests can take part in a cooking class or embark on a guided sensory immersion on the farm, where produce that is not easily available on island is grown. The resort also supports farmers in the community by buying vegetables and "ground provisions" that they do not cultivate themselves.
Anse Chastanet has over 12 miles of hiking and mountain biking trails on the 600-acre estate and a coral reef offshore. The resort also has a chocolate lab, where chocolate is produced from cocoa trees on the estate. It also has an in-house dive shop where dive enthusiasts can get certification as a Professional Association of Dive Instructors (PADI) Open Water Scuba Instructor.
Visitors traveling between July 15 and October 15 can take advantage of free night promotions in various room categories. There also is the Summer Escape Sale, which offers 35 percent off room rates with an all-inclusive meal plan.
