Sereno Hotels has appointed Riccardo Ravaglia to as F&B director of Le Sereno St. Barths.
In this role, Ravaglia will manage the food and beverage operations of Le Sereno’s eateries, including Restaurant Le Sereno. Ravaglia comes to St. Barths from New York City, where he worked in management positions in several of the city’s restaurants, including Harry Cipriani’s, Sant Ambroeus and the Greenwich Hotel in Tribeca.
Ravaglia joins the culinary team at Le Sereno, which includes Chef Alex Simone, as they concoct new additions to the resort’s cuisine offerings. Chef Simone will introduce a new menu at the Restaurant featuring several new dishes, including a Truffle Strozzapreti pasta accompanied by an asparagus and parmesan emulsion, a Mahi-Mahi Ceviche, and a new Lobster Fricasse using fresh Caribbean lobster tail and surrounded by carrots, morels and a pinot grigio emulsion. Linguini Lobster, the Risotto al Gambero Rosso and the Veal Milanese will remain on the menu.
Ravaglia comes to Le Sereno with over 20 years of management and hospitality experience. Growing up in the city of Ferrara, located in the Emilia-Romagna region of Italy, gave him a passion for food. In his free time, Ravaglia enjoys playing the guitar, occasionally creating his own music and listening to jazz or Italian “cantautori” while in the company of his wife and son, as well as traveling the world and meeting new people.
