MGM Resorts has announced that celebrity chef Wolfgang Puck will be re-opening the doors of a new, reimagined Spago in spring 2018, this time at the Bellagio Resort & Casino
Spago, Puck’s flagship restaurant, debuted on the Las Vegas strip 25 years ago at Caesars Palace. Many restauranteurs and gastronomists credit Puck and Spago with ushering in the age of celebrity chefs and haute cuisine that defines the Las Vegas restaurant scene today.
The main dining room itself has floor-to-ceiling floating glass windows, two chandeliers to highlight the room’s modern art pieces and accents cultivating a contemporary aesthetic.
This reimagined Spago will continue to embrace the upscale California cuisine that put the original restaurant on the map years ago. Globally influenced seasonal fare will be the focus of Spago’s market-driven menus, with signature Wolfgang Puck touches of course, such as gourmet pizzas topped with salmon and caviar. For lunch and dinner guests will be able to select from an à la carte menu or experience Puck’s multi-course California Tasting Menu. A special bar menu will also be available, alongside an artisanal cocktail program and an extensive international wine list.
The restaurant assumes the place of Todd English’s Olives, which will be closing this winter. Wolfgang Puck himself said "My partners and I are thrilled to join the Bellagio family and introduce our new Spago to the thousands of international guests the resort welcomes daily. We reimagined Spago in Beverly Hills more than 20 years ago and look forward to doing the same in Las Vegas."
